POACHED! AND I DON'T MEAN EGGS...

Friday Evening

Another beautiful night, another great walk with Mom!! I am so fortunate to have a mother that likes to go for long power walks with me, makes exercising so much faster and so much more fun!! Tonight we did 50 minutes on the greenway! Long walk tonight. My legs were feeling shot by the end, I blame the ZWOW!

One of the best parts about tonight's dinner is that it basically cooks the whole meal in one pan! (Except for the cous cous)

Wine for the chef....

Poached Tilapia with Lemon Sauce
In a big skillet I combined a cup of chicken broth, 2 tsp. of lemon peel and 1/8 tsp. pepper. Brought it all to a boil then lowered the heat and added 4 fish filets and asparagus that had been chopped in half.

*A tip with asparagus in case you didn't know- the ends are very woody and always need to be removed but you don't have to mess with tediously cutting each one with a knife. Just test the end of the spear with your hands and it will break off right where it is supposed to!*
Cover and cook for a few minutes and then add very thinly sliced strips of yellow pepper. Cook just a few minutes more and then remove fish + veggies with a slotted spoon.
Now you make the sauce by combining ___cup of chicken broth + 4 tsp. of cornstarch together and stirring it into the skillet (the one that you just took the fish out of!). Cook and stir until thick and bubbly and continue cooking about 2 more minutes. Stir in 2 TBS of chives at the end and that's your topping!

Layer the fish, veggies and sauce all on top of cous cous and you have a meal! :)
 This tasted spectacular!!! I loved the glaze especially!

 I do think it didn't get quite the lemony flavor it could have because I used a pretty wimpy lemon that didn't zest well, but overall so SO good!
