SUN-DRENCHED FISH

Friday Evening


Gym time: 16 minutes on the treadmill (200 cal) combined with 14 minutes of the arc trainer (164 cal)

Then it was home to fix two exciting new dishes: citrus fish and lemon broccoli with garlic!

Inside this foil pack lay some delicious smelling tilapia covered in salt, pepper, EVOO, orange peel, lemon peel, parsley and onions all ready for cooking!
 When the fish went in the oven I made the sauce to go on the broccoli (EVOO, lemon juice, garlic, salt and pepper). I used a lot less olive oil than the recipe called for though, so easy to cut back on calories with things like this!
 A short time later aaaand...we have fish!

 They smelled so good that it was hard to photograph them and not just dig in!! (The kitties thought so too...)
Served with the broccoli and a heavy dose of sunshine! 


It did call for the broccoli to be refrigerated, but I preferred it hot!
It was all really tasty, but I had one critique for the broccoli and one for the fish.
Broccoli: could have used even less sauce (even though I cut back on the olive oil)
Fish: too many onions!!

But other than that...a fantastic dinner!
Now it's off to enjoy my Friday evening by introducing Hillary to our putt-putt course. Can't wait for Zach to get home from all his coaching stuff tonight and then have a whole day together tomorrow!!
